I always like to make this dish at barbecues it relies on a simple marinade of pineapple juice, which makes the beef quite tender and quick barbecuing gives the beef a smoky fragrance.
Ingredients
• 450g chuck steak, preferably the fatty side
• 2 tablespoons soy sauce
• 3 tablespoons pineapple juice
• 2 tablespoons mirin or dry sherry
• 1 tablespoon shaoxing rice wine or dry sherry
• 2 tablespoons finely chopped garlic
• 3 tablespoons finely chopped spring onions
• 1 tablespoon sesame oil
• 1 tablespoon sesame seeds toasted
• 1 teaspoon salt
• 1 teaspoon freshly ground five pepper mixtures (black, white, pink, and green peppercorns and allspice berries) or just black pepper

Method
Cut the chuck steak into 4 inch pieces. Combine the soy sauce, pineapple juice, mirin and rice wine or sherry, garlic, spring onions, sesame oil, sesame seeds and salt and pepper. Let the beef marinate refrigerate for 24 hours then bring to room temperature.
Soak the skewers in cold water for 30 minutes and then skewer the beef cook on the barbecue for 2 minutes.
