Method
Filling
Mix eggs and sugar together, add lemon juice and zest, add cream mix together. Pass through sieve, put in fridge.
Jelly
Add fruit, sugar, water & star anise to pan, simmer for 40 minutes, strain stir in gelatine, pour into moulds and place in fridge until set.
Pastry
Sift flour and salt. Rub in butter, add sugar and egg, mix together and put in fridge for 30 minutes.
Lemon Tart
Roll out pastry, place in flan ring and bake blind for 20 minutes,
pour mixture into flan ring and bake for 40 minutes on 160c,
place in fridge until set.
