Method
1. Boil potatoes and red onion together until cooked
2. Place salmon on a tray and drizzle with a little olive oil, put in oven at 200˚C for 12 mins
3. Put mustard and cream in a pan, boil and season with salt, pepper and a pinch of sugar
4. Put in a pan the butter, spinach and cook until soft. Add potatoes and onion, mix together well
5. Serve with salmon and bacon on top of potato mix and sauce around
