Method
1. Add a drop of oil to a hot Wok or deep frying pan
2. When the oil is hot add the Garlic, peppers Onion & courgettes all chopped, cook on full heat for 3 minutes
3. Combine the boiling water, chicken stock, saffron, peas, cracked black pepper, turmeric and cayenne pepper then add to the pan.
4. Bring to the boil then add the Paella rice, reduce to a simmer and cover, stirring occasionally.
5. After 25 minutes add the seafood melody and stir well.
6. Allow to simmer for another 8 to 10 minutes until the consistency of the Paella is light and dry.
7. Serve into a hot paella dish and garnish with lemon and basil.
