Method
1. In a Roasting tray put the chopped vegetables and 4 tablespoons of olive oil, salt and pepper, then put into a 190°C preheated oven for approx 45 minutes or until vegetables are soft.
2. Slice the new potatoes 1cm thick and boil until they are just cooked
3. Put the new potatoes and spring onions in a tray, add salt and pepper with 2/3 tablespoons of olive oil and cook for 30 minutes at 190°C in the oven.
4. In a hot frying pan put a little olive oil, season the haunch steaks with salt and pepper on both sides. Put the steaks in the pan and colour both sides. Turn down the heat and keep turning steaks until cooked approx 5 minutes. When cooked put onto a plate to rest.
5. With the frying pan you have just used (don’t wash) add the cream and 1 teaspoon of cracked black pepper. Boil until thick. Taste the sauce and add salt and pepper if needed.
6. Put the steaks into the frying pan with the sauce along with the meat juices from the plate, then boil. Take off the heat and serve with the roast vegetables and new potatoes.
